Since 1994, Jordan Armstrong has called Incline Village home, a place that has shaped his spirit as much as it has his craft. For over three decades, he has honed his artistry both on the slopes and behind the bar, blending precision, passion, and a deep respect for the mountain community he serves.

Chef Cole Dunbar’s culinary journey began in the forests and fields of Northern California, where he learned to hunt, fish, forage, and cook over open fire alongside his father. Over the past two decades, he has held every role in the industry, from chef to owner, crafting a philosophy rooted in simplicity, seasonality, and respect for tradition.
His cooking honors old-world techniques, smoking, curing, preserving, reimagined through a modern lens that evokes nostalgia and connection. At Paxton’s Settlement, Chef Dunbar’s dishes tell a story of land and memory, transforming humble ingredients into experiences that feel both timeless and deeply personal.
